Tequasia has been named our Employee of the Month for January. With 10 years of experience in the field, she moved to Mississippi in 2021 to be closer to her family. She began working at Goldton as a Resident Assistant. Her best advice for anyone in her profession is, “Always serve with the greatest care and love because you never know how you will make a difference in someone’s life.” Outside of work, she enjoys spending time with her family, which includes her three children. Our employee of the month to start the year is Ms. Tequasia Henry. In her few months of working, she has been such a joy to have, especially with our Memory Care residents. Her patience and positive attitude radiate through those residents and it\u2019s refreshing to have over there! Our resident of the month is Ms. Diane Crafton. She was a long-time employee of Baptist Memorial Hospital and is a joy to have here at the community.<\/p>

Lemon Buttermilk Pie

Ingredients:<\/strong>
1 cup buttermilk
1 tbsp lemon juice
1 tbsp grated lemon zest
2 cups fresh Louisiana strawberries, sliced
2\u00bc cups sugar
1 tbsp flour
pinch of salt
2 eggs
2 egg yolks
1 tbsp pure vanilla extract
1 (9-inch) unbaked pie shell<\/p>

Directions:<\/strong>
Preheat oven to 350\u00b0F. In a small mixing bowl, combine sliced strawberries with \u00be cup sugar, stir, cover with plastic wrap and refrigerate. This should be done at least 6 hours prior to serving. In a large mixing bowl, combine remaining sugar, flour and salt. Blend well. Add eggs and egg yolks, and using a wire whisk, cream into sugar mixture. Once blended, add buttermilk, vanilla, lemon juice and zest. Whisk well to incorporate and dissolve sugar. Pour into pie shell and place on a cookie sheet. Bake 50 minutes or until pie is lightly browned and filling is just set. Remove and cool a minimum of 30 minutes prior to serving. Top each slice with a generous portion of sugared strawberries.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
