Cillmuriel Gladney - Associate of the Month

Ms. Cillmuriel Gladney is 29 years old and was born February 14, 1994. She was raised in the city of Collins, MS and is now a resident of Louisville MS. Cece attended East Central Community College, where she graduated from the licensed practical nursing program July 2023. The reason behind her wanting to be a nurse comes from watching her mom pass from Pancreatic Cancer back in 2015. She eventually will go back to further her education to become a registered nurse and work in oncology. She enjoys helping others and making smiles.  Cece believes in order to receive a smile you have to make one, so she tries to make plenty.

Pet therapy utilizes trained animals and handlers to achieve specific physical, social, cognitive, or emotional goals with patients.

Caprese-Avocado Toast

Caprese-Avocado Toast

Ingredients:

Avocados
Lemon juice
Sea salt
Black pepper
Toasted bread slices (whole grain, or gluten-free if desired)
Fresh mozzarella slices
Grape tomatoes (or tomato slices)
Fresh basil
Balsamic glaze

Directions:

Cut the avocados in half, remove pit, and scoop the flesh into a small bowl. Add the lemon juice, sea salt, and black pepper, to taste. With a fork, mash the ingredients together, keeping the texture slightly chunky.

Spread the mashed avocado evenly onto toasted bread slices. Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, if desired. Drizzle with balsamic glaze and serve immediately.

Note-I like to use whole grain bread. If you need the recipe to be gluten-free, use gluten-free bread. If you don’t have grape tomatoes, tomato slices will work too!

Johnie Power - Resident of the Month

Mrs. Power loves to walk around and socialize with the rest of the residents. She also likes to sit outside in the courtyard and listen to the birds chirping and soft music. Sometimes you will catch her feeding the birds has they fly in. She loves to smile and help others that are in need.

Historical Significance:

Evidence suggests that Mammoth Cave has been used by humans for thousands of years. Native American artifacts discovered in the cave date back to around 4,000 years ago, highlighting its historical importance.
