Ingredients:<\/strong>
Salmon fillets \u2013 4 pieces
Lemon juice \u2013 2 tablespoons
Olive oil \u2013 3 tablespoons (divided)
Salt \u2013 3\/4 teaspoon (divided)
Black pepper \u2013 to taste
Kale \u2013 1 large bunch, chopped
Dates \u2013 a handful, cut into thin slivers
Apple \u2013 1, cut into matchsticks
Cheese \u2013 your choice, crumbled or shredded (e.g., Parmesan or feta)
Almonds \u2013 a handful, sliced or slivered
Rolls \u2013 4, for serving<\/p>

Directions:<\/strong>
Let salmon sit at room temperature for 10 minutes.
Whisk lemon juice, 2 tbsp olive oil, and 1\/4 tsp salt in a bowl. Toss with kale and let stand for 10 minutes.
Add sliced dates, apple matchsticks, cheese, and almonds to kale. Season with pepper and toss well.
Season salmon with 1\/2 tsp salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook salmon, skin-side up, for 4 minutes. Flip and cook for 3 minutes more.
