Jaleen is originally from Roanoak, Alabama, where she was the child of Arthur and Eurla Langley.<\/p>

She is the proud mother of three wonderful children: Tim, Lynn, and Alison. In 1958, Jaleen and her family moved to LaGrange, Georgia, where she worked alongside her husband, Gene, in their air conditioning business until 2002. She also spent 10 years working for the Truitt County School Department before retiring and later working part-time in insurance.<\/p>

In her free time, Jaleen enjoys relaxing, playing bridge, and Mexican Train Dominoes.<\/p>

Ingredients:<\/strong>
2 pounds lean ground beef (or ground turkey)
8 slices thick-cut bacon, cut into 2-inch pieces
1\/2 large yellow onion, diced. about 3\/4 cup
2 stalks celery, diced, about 1\/2 cup
2 medium red bell peppers, stemmed, seeded and diced
4 cloves minced garlic
2 tbsp chili powder
1 tbsp cumin
1 tbsp smoked paprika
1 tsp dried oregano leaves
1 14.5 ounce diced tomatoes
2 cups low-sodium chicken broth
shredded cheese, avocado slices. green onions and more bacon to garnish<\/p>

Directions:<\/strong><\/p>

Cook Bacon:<\/strong> In a large pot, cook bacon until crispy. Remove and set aside, leaving the grease.<\/p>

Saut\u00e9 Veggies:<\/strong> Cook onion, celery, and bell peppers in the bacon grease until soft. Add garlic and cook briefly.<\/p>

Brown Meat:<\/strong> Add ground beef (or turkey) and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.<\/p>

Add Spices:<\/strong> Stir in chili powder, cumin, smoked paprika, and oregano; cook for 1\u20132 minutes.<\/p>

Simmer:<\/strong> Add diced tomatoes and chicken broth. Bring to a boil, then simmer for 25\u201330 minutes.<\/p>
